The Opportunity
Cell cultured proteins have the potential to provide nutritional equivalence to traditional proteins while providing a reduced environmental impact and options for those with dietary restrictions. But after early initial interest, the sector has struggled to compete with animal-based originals on taste, variety, consistency and price. AuX Labs is tackling this head on with fermentation-based casein that give plant-based cheeses the stretch, melt and sensory properties of traditional dairy based products.
The Challenge
AuX Labs was at a critical inflection point. They’d been talking to NPC throughout the development of their innovative yeast strains and processes. They had proven their strains at the lab scale. Now they needed to validate at the commercial scale. To do that, they needed expertise that has ‘been there, done that’.
Going through our technology, answering all the questions for this application; that level of diligence matters. When we’re talking to new investors, and they see we’ve been through this process with NPC, it’s a great stamp of approval.
