The Opportunity
The global bacon market is valued at approximately $75B in 2025. The plant-based meat category has declined 11%, with 36% of consumers lapsing due to taste dissatisfaction. No food-grade commercial source of pork-specific phospholipids exists outside of cell culture. This creates a significant gap in the market for authentic pork flavour in plant-based and hybrid food products.
The Challenge
Pluripotent stem cell (PSC) manufacturing is blocked by shear sensitivity and the need for manual cluster management. No PSC bioprocess has been scaled beyond bench scale anywhere in the world. Myo Palate must demonstrate continuous production at 15L bioreactor scale. They must also confirm phospholipid compositional specifications and generate the sensory and analytical data needed for product development partnerships.
NPC’s support is helping Myo Palate take a critical step from bench-scale innovation toward pre-pilot validation. This funding enables us to advance the scale-up of our cultivated pork platform while confirming the sensory profile of our flavour ingredient. More importantly, NPC’s backing provides important validation of our technology as we work to build a Canadian biomanufacturing platform capable of producing sustainable, high-value food ingredients at scale.
